You’ll never find chippy chips in the US. At least I never found it at any place I’ve eaten on the west coast. A few places got the fish absolutely spot on amazing (Seaside, OR) but the chips are really like chunky standard chips at best.
I think they think chip shop chips are "steak fries" because they're thick cut. In fact, what does make a chip a chippy chip? They're crispy yet somehow soft and greasy, and unlike any other chip known to man.
I think it's because they're actual fresh potatoes.
I remember seeing on something like Inside the Factory, they went to an oven chip factory and oven chips are actually lightly battered/coated in something so that helps them retain their shape and go crispy in an oven (without being fried).

Lol this reminds me of when some British friends and I went out for fish and chips in London. I hadn't had it before and was looking forward to trying the real thing. We went to some grubby hole-in-the-wall place with beat up chairs and beige tile and it smelled vaguely reminiscent of a petrol station shop. That was not what I was expecting! 😆
Tried this in vegas. Chips are the crappy fries and I would have expected the proper thick soft chips like the chip shop type.
The fish in batter I found light, crispy and tasty it was perfect.
Assuming you do like peas under normal circumstances, try making them yourself with boiled frozen peas and mash them with butter and salt. It's a totally different experience to the nasty and over boiled stuff I think you're thinking of.

I’m from a seaside town in South Wales. We have chippies all over the place, there’s some good and some bad, but all, are better than any fish and chips I’ve ever eaten from a restaurant.
This is not a criticism of any of these places, it’s just not the same for me.
My question to you: if the queues were anything like I saw in Vegas, was it worth the wait?
All I can say is, no fish and chips is worth an hour+ wait, unless you’ve just got back from being stuck in the wilderness for days without food.

I frequent the one in Las Vegas in the strip it’s not bad and I do like his sauce choices. It’s pretty good. However if you are in Vegas I recommend The Crown and Anchor for more authentic fish and chips.

This seems quite a way from the platonic ideal of fish and chips to me:
1) what’s that green shit doing in there? Only acceptable greenery is mushy peas;
2) chips are all wrong. Stodgy chippy chips needed so they can soak up loads of vinegar and salt;
3) that vinegar is nowhere near brown enough;
4) the fish should be one comically large piece, not multiple smaller;
5) wax paper > boxes;
6) I should get dinner for 2 with change from £20, including my sneaky car snack of a battered sausage)
Haven’t had them but they look delicious. That said: Ramsay has a number of restaurants here and I’ve never had a bad meal at any of them. His burger restaurant in Chicago is probably one of the best burger/chips meals I’ve had. Not quite as good as Achatz (Alinea), Bayless (Frontera), Duffy (Ever/Grace) but fills a smart middle-ground gap in the market.
