Found this "Fitness is calculated using your Relative Effort (based on either heart rate data or Perceived Exertion input) and/or power meter data. This way you can identify patterns in your training and see the big picture of how all your workouts are adding up over time. Your score is entirely relative to you. It serves as a benchmark, to show how many points you currently have compared to any date in the past two years. The percentage increase or decrease of Fitness level for the selected timeframe will be displayed in green or black respectively above the graph. The number in the orange box that’s automatically displayed is your Fitness score on the current day. Select any point in the graph to view your Fitness score for that day."

The amazing thing about cycling is after such dry spells all you need to do is pick up the bike and start riding again. I'm going through the rebuilding process similar to you. The first months of quarantine I was the fitest I'd ever been on the bike, then I took a new role at work and was getting buried due to a understaffed team. Since all racing was cancelled I focused on my other life issues and this year I've been working to get fit again, it comes back just try to stay as consistent as you can.
