This also makes me sad. A good trick is to add a bowl to the top of a pot of simmering water (Bain marie), then follow the process, or you can do a blender hollandaise that never fails. Recipe: Add 3 egg yolks, 1/4 tsp of Dijon mustard, 1 Tbsp of lemon juice and a dash of your favourite hot sauce to a blender or food processor. Blend until it thickens just a little, then slowly add a stream of 1/2 cup of hot melted butter. No cooking = no curdling

I was whisking it in a double boiler because everyone was asleep and the blender is really loud. The blender is a great way to go.

Another tip for tempering eggs, if they've started for curdle remove from heat and run through a find mesh sieve, whisk until it's cooled a little then return to heat and you'll be right back to a silky texture!

Oh, I see you added a bit of texturing to the sauce. In all seriousness, next time that happens, if you have one, hit it with an immersion blender or a nutribullet type blender. I've salvaged stuff that has separated before by doing that.
