No cooking = no curdling
Another tip for tempering eggs, if they've started for curdle remove from heat and run through a find mesh sieve, whisk until it's cooled a little then return to heat and you'll be right back to a silky texture!

In all seriousness, next time that happens, if you have one, hit it with an immersion blender or a nutribullet type blender. I've salvaged stuff that has separated before by doing that.

I was whisking it in a double boiler because everyone was asleep and the blender is really loud. The blender is a great way to go.
